Carrot-Zucchini Turkey Meatballs

1 lb Ground turkey
3/4 cup Finely grated carrots
3/4 cup Grated zucchini
1/2 cup Cooked quinoa
1/2 cup Chopped scallions
1/4 cup Chopped parsley
1 tbsp Sriracha sauce
2 tsp Soy sauce
1 clove Garlic (finely chopped)
1/4 cup Grated parmesan
Freshly ground pepper
2 tbsp Olive oil (for frying the meatballs)

reheat oven to 400°F.

In a large bowl, gently combine all ingredients. Form about 1 1/2-inch meatballs (about 14).

In a large oven-proof skillet, heat the oil and brown the meatballs on all sides. Then transfer to the oven and bake for about 15 minutes—until a thermometer indicates they're 165°F.
