Black Bean Sweet Potato Chili

3 tbsp Grapeseed oil
1 cup Onions (chopped)
1 Large sweet potato (diced)
1 cup Carrots (diced)
1 cup Corn
1 tbsp Garlic (chopped)
3/4 cup Tomato juice
1 can (15 oz) Fire-roasted tomatoes
1 can (15 oz) Black beans
1 1/2 tsp Chili powder
1 1/2 tsp Ground cumin
pinch Salt
Freshly ground pepper

In a large pot, heat oil. Cook onions, stirring, until softened, about 5 to 7 minutes.

Stir in sweet potato, carrots, corn, garlic, tomato juice, fire-roasted tomatoes, black beans, chili powder, cumin, salt and pepper and simmer for about 25 minutes. Serve and enjoy!
