Beet and Blueberry Salad

The combination of beets and blueberries is not a common one, but it tastes so good. Plus, both beets and blueberries give the body essential nutrients. Toss this salad together quickly for a healthy appetizer or main course.

1 1/2 cups Blueberries
3 cups Diced red beets
1/2 cup Thinly sliced scallions (white and green parts)
1 tsp Ginger
2 tbsp Apple cider vinegar
2 tsp Maple syrup
1/2 tsp Salt
2 tbsp Grapeseed oil

In a medium or large bowl, combine blueberries, beets, scallions, and ginger.

Sprinkle with vinegar, maple syrup, salt, and oil. Toss well and serve.
