Preheat oven to 450° F. Spray two large baking sheets with nonstick cooking spray and set aside.
Drain as much excess liquid as possible from the potatoes.
In a large mixing bowl, thoroughly combine shredded potatoes, onion, egg, matzo meal, baking powder, and salt and pepper.
With clean hands, carefully roll latke mixture into a medium-sized ball, then flatten between your hands and carefully place on the baking sheet. Repeat this process, leaving about 1 inch of space between each latke, until all the mixture is used.
Bake latkes for approximately 15-20 minutes, or until latkes are baked through and outsides are golden brown and crispy.
Serve latkes immediately, with applesauce and sour cream on the side, if desired.
