Avocado Fries

These fries are the perfect small plate to share with family and friends. By substituting potatoes for avocados, you are taking advantage of its anti-inflammatory properties — all while cutting down on carbs. You don’t need a deep fryer to make delicious fries when you can bake them in the oven and avoid using fatty oils.

1 cup Panko bread crumbs
1 tsp Paprika
1 tsp Garlic powder
1 tsp Salt
1 tsp Pepper
2 Large avocados
¼ cup Flour
1 Egg (beaten)
1 tbsp Fresh lemon juice

Mix together panko breadcrumbs, paprika, garlic powder, salt, and pepper in a bowl.

Peel and pit the avocados and cut lengthwise into fries.

Dip the slices in flour then an egg wash and coat in panko breadcrumbs with a squeeze of lemon.

Roast in the oven on a greased rack for about 15 minutes until golden.
