GREEK YOGURT MASHED POTATOES
SOURCE: AhavaFelicidad
- 6 potatoes
- 6 tbsp unsalted butter
- 2 tsp black pepper
- ⅛ tsp cayenne pepper
- 2 tsp sea salt
- 3 tsp fresh chives
- 4 tbsp Greek yogurt
- Clean 6 potatoes with baking soda. Feel free to use a veggie brush. This step is important even if you plan to peel your potatoes. Rinse and cleanse twice -making sure not to let the baking soda sit on the potatoes longer than 3 minutes.
- Cut the potatoes into 2” inch sections so they will boil and flake away easier.
- Place your potatoes into a pot fully immersed in cold water with a pinch of sea salt and bring to a boil. This will take at least 20 minutes. At the boiling point let boil 5 minutes, then turn the heat down to a simmer for another 15-20 minutes using a long knife or fork to check for softness.Once your knife or fork flows through the potatoes with ease, turn off the heat.
- Drain the water through your stainless steel or other strainer and glide the potatoes back into the pot.
- Add 6 tbsp real unsalted butter, 2 tsp black pepper, 1/8 tsp cayenne pepper, 2 tsp sea salt, 3 tsp fresh chives and fresh dill or fresh rosemary and fresh dill finely crushed.
- With your stainless steel potato masher, mash with love and gratitude. Mash until there are only small yet soft chunks and then add 4 tbsp of Greek yogurt.
- Now stir with a spoon or continue to mash to your liking!
