Dave Lieberman's Almond and Herb Baked Halibut

Load up on omega-3s with this healthy halibut recipe, courtesy of Chef Dave Lieberman. Pair this entrée with Warm Balsamic and String Bean Quinoa Salad and Berry Granita for a nutritionally complete dinner.

1/2 cup Olive oil
Juice and grated zest of lemon
1/2 cup Sliced raw almonds
2 cloves Garlic
1/4 cup Finely chopped parsley
4 (6 oz) Pieces of halibut

Toss olive oil, lemon juice and zest, almonds, garlic and parsley into a mixing bowl.

Place halibut on a large baking sheet lined with aluminum foil. Season lightly with salt and black pepper and drizzle with olive oil.

Divide almond and herb mixture among 4 pieces of fish and smooth over each piece to create a smooth coating.

Bake at 400F until almond mixture is slightly brown and fish is cooked through and flakes easily; about 15 minutes.
