Almond, Cherry, and Chocolate Couscous

1 1/3 cups Whole-wheat couscous
1/2 tsp Salt
3 cups Unsweetened almond milk
1/4 cup Almond butter (or to taste)
1/4 cup Dried cherries (or chopped dried apricots)
1/4 cup Chopped dark chocolate

Put the couscous, salt, and almond milk in a medium pot over high heat. Bring to a boil, then cover and remove from the heat. Let stand, covered, for at least 10 minutes or up to 20 minutes to finish cooking.

Stir in the almond butter and then fluff the couscous with a fork. Serve topped with the dried fruit and chocolate sprinkled on top.
