This easy-to-make side dish uses boxed rice as a base. Making fried rice doesn't have to be intimidating. Use the boxed rice in your pantry to make this tasty spinach fried rice dish.

3 tbsp Canola or vegetable oil (divided)
1 Garlic clove (grated)
2 cups Cooked boxed rice
dash Of salt
10 oz Chopped frozen spinach (defrosted and drained)
1-2 Eggs
2 tbsp Low sodium soy sauce
1 tbsp Sriracha or hot sauce
2 Limes (juiced)
1 Bunch scallions (optional)
1/2 cup Cilantro (optional)

Put a large wok or a Dutch oven on high heat and turn on your hood (it's going to get a little smokey!).

Add 2 tablespoons of oil, and while the pan is heating, grate the garlic and add it along with the rice and some salt into the hot pan. 

Stir every 20-30 seconds for two minutes and then add your drained spinach, cook for another minute.

Move your rice to the side, adding the rest of the oil to the pan.

Add the eggs, scramble them, and cook for a minute and fold in your rice. 

Add in your soy sauce and hot chili sauce with any other fresh ingredients you want. (I use some chopped scallions and cilantro for freshness.)
