1 tbsp Coconut oil
5 Medium scallions (thinly sliced)
1 tsp Minced garlic
1 lb Medium shrimp (about 30 per pound), peeled and deveined
1 Red bell pepper (stemmed, seeded, and cut into 1/2-inch wide strips)
4 oz Fresh green beans (stemmed and cut into 1-inch pieces about 1 cup)
1 tbsp Bottled jerk seasoning blend
1 tsp Apple cider vinegar
1/2 cup Light coconut milk
1/4 cup Low-sodium vegetable broth

Melt the coconut oil in a large saucepan over medium heat.

Add the scallions and garlic; cook, stirring often, for 1 minute.

Add the shrimp; cook, stirring occasionally, for 3 minutes, or until pink.

Add bell pepper, green beans, and jerk seasoning. Cook for 1 minute, or until fragrant.

Stir in the vinegar, then pour in the coconut milk and broth.

Bring to a simmer, stirring occasionally. Cover, reduce the heat, and simmer slowly for 5 minutes to blend the flavors.
